I am not a C of G modeler but have found this thread most informative.  Since I didn't know what kaolin was, nor what it could be used for, I had to resort to Google as my friend.  http://www.georgiaencyclopedia.org/articles/science-medicine/kaolin   So now I know it is most commonly found in the US in Georgia and is used most often in the production of white china.

What were these covered hoppers used for?

Feed, Kaolin, Cement, and Clay mostly, although the standard "any dry powdered commodity" could be hauled in much the same manner. Sugar was reserved for a group of 4180 cuft Airslides delivered in the post-1960 era.
