I recall using a plastic 2-56 screw that was too long, running it in, then cutting off the excess with chisel blade. You could see it only if you looked hard. I did this for a steam loco pilot too.

A bigger challenge is figuring out how to use these coupler boxes where the top of the center sill is exposed, such as on cabooses and tank cars. Hiding the other end of the mounting screw is much more challenging.
