     A week from California to Kansas City sounds like barely walking speed to me even in the 1890's.
But some of the equipment mentioned sounds like the predecessors of express reefers or cars 
similar to those used for silk shipments in the same era. Perhaps these moved a bit faster than the
refrigerator cars mentioned in the Santa Fe shipment from San Bernardino to Kansas City.
