The roof looks good, I haven't tired oils but should as the results you have are quite nice

Been exchanging emails with Ed Hawkins on the early use of galvanized roofs and the Hutchins DryLading steel roof and one called the Universal Type Hutchins roof used 1/16” steel galvanized panels.

You could mount a coupler like the brass steam engine makers did on the pilots. Take a long shank Kadee coupler, cut off the wide pivot hole part, drill a small hole for a pin through the coupler

No buffers. I just applied Erie lettering from a Champ decal set.
I am looking for a coupler with minimal side swing. If it doesn't center that is acceptable. A Kadee #4 is the only one I know that
