I think Bruce Smith has it right. The "side-facing goat" is seen in profile, while the "front-facing goat" is seen full face. – Andy

There was also a herald that was used on some locomotive tenders that was called the "Forward Facing Goat". The goat on the engineers side, was painted as to face right, or forward in the train.

I could be wrong, but I think that you have it backwards. As I understand it, the older "forward facing goat" faces out to the side, the "side facing goat" faces forward, along the car side

I think you answered your own question. If the goat is facing the end of the
car, it's "front facing". If it's facing to the side, it's "side facing".
