Welcome to the club.
Washing parts depends on who made the kit and what mold release they used. Some mold releases are hard to completely remove, and some paints like Tru Color have poor adherence

One thing that I would add is to completely read the instructions and try to identify all the parts before starting.
I leave the small parts together as they are easier to identify

Yes, watermelons in stockcars was very common. Typically laid in a bed of straw for cushioning. Attached are a few photos.

I agree with Joe, except that I have never washed any parts other than sides, doors, roofs and ends.
I don't wash before painting, but I'm careful not to handle the car with oily

I pretty much follow Bruce's regimine in terms of no washing and cleaning flash from parts. I sometimes will start the truck hole by tapping a third to halfway in and then the the 2-56 screw do the

No need to wash before assembly. I never do.
Remove flash from all parts before starting assembly, mostly because it is messy. Consider wearing a dust mask doing this as resin dust is
