I'm working on some documentation for Lehigh Valley boxcar decals, and need to
know if the 1937 AAR cars (61000 series) carried the "Route of the Black
Diamond" lettering from the factory.

I know the first batch of LV PS-1 cars had this lettering, but I have been
unable to locate an as-built picture of the '37 AAR cars.

Yes. I have a builder's photo (from the Rich Burg collection) of LV 61299 showing the "Route of the Black Diamond" stenciling below "Lehigh Valley" and above the reporting marks and numbers, and the small black diamond LV herald above the dimensional date to the right of the door.
